Banana Granola Swirl Bread

- 2T butter, softened shopping list
- 2 very ripe bananas, mashed shopping list
- 1/4 cup raw sugar shopping list
- 1 large egg shopping list
- 1/2 cup all natural sparkling juice(I used pear, but use any flavor you'd like) shopping list
- 1 3/4 cups flour(whole wheat or half and half is okay) shopping list
- 2t baking powder shopping list
- dash of salt shopping list
- 1 cup favorite granola(I used a berry blend) shopping list
- 8oz cream cheese, softened shopping list
- 1T honey shopping list
- 3t vanilla, divided shopping list
- about 1t fresh squeezed lemon juice shopping list
How to make it
- In bowl of electric mixer, or large glass mixing bowl, beat butter and bananas together.
- Add sugar and beat well.
- Add egg and beat, again.
- Add juice and 2t vanilla and mix well.
- Combine flour, baking powder and salt together.
- Add flour mixture and mix just until blended.
- Fold in granola and set aside.
- In another, smaller bowl, beat together cream cheese, vanilla, lemon juice and honey. (this is where, perhaps, a slightly thinner consistency might have been better. When I make it, again, I will increase the lemon juice, taste, and see if I can make it a lil thinner, but still a good flavor and not too bitter :) Could also perhaps have added a touch of the sparkling juice)
- Pour about 1/2 of the bread batter into prepared loaf pan.
- Dot with dollops of the cream cheese mixture and, using a knife, attempt to swirl, or cut in, the cream cheese, slightly.
- Top with remaining batter.
- Bake at 350 for about 50-60 minutes, until toothpick comes out clean(if it's white, you hit the cream cheese, so try again. ;-)
