Ingredients
  • Mix and Pour into 9x13 pan bake @350 for 35 minutes
  • 2 cups sugar
  • 2 eggs
  • 2 cups flour
  • 2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla
  • 1 large can (16 ounces) fruit cocktail, undrained

Directions
  1. Topping:
  2. BOIL 10 minutes
  3. 1 stick butter
  4. 1 cup evaporated milk
  5. 1 1/2 cup coconut
  6. 1 cup sugar
  7. Pour over hot cake. Cool

My grandma used to make this, except she omitted the topping and would serve it with a little whipped cream or vanilla ice cream. Not quite as rich, but just as yummy. She would sometimes substitute Mandarin Oranges for the fruit cocktail. Reading the recipe brings back my childhood...


I have a "died and went to heaven pineapple cake recipe on here" it is about the same. I grew up with this and loved it the gooey and wetness all the coconut in the topping. I am glad to know someone else out there loves this as much as I do.
