Creamy Parmesan Salad Recipe

Ingredients

2 C. rotini noodles

1/4 C. shredded carrots

1/4 C. frozen peas

1/4 red bell pepper, diced

1/4 onion, diced

1 C. Mayo

1/2 C. ranch dressing

1/4 C. shredded cheddar cheese

1/4 C. Bacon Bits

1/4 C. Parmesan cheese.

Directions

Boil water in medium saucepan. When water is boiling, add noodles, carrots, peas, peppers and onions. Cook until noodles are soft.

Remove from heat. Drain and rinse with cold water until noodles are chilled.

Add remaining ingredients. Chill and serve.

I really didn't think this deserved a 3, so I made some for lunch -- and it was delicious! (Only substitutes: I used real bacon, cooked crispy & crumbled, and a very little bit of grated red onion - along with diced shallots. Also added a wee bit of sundried tomatoes -- before I had to throw them out! Mayo was Hellmann's, ranch dressing was sour-cream based, rotini was tri-colour.)
I hope that anyone who rates a recipe 'low' in the future, has to say why they didn't like it -- which is only fair -- or the rating won't show. Anyway, I thoroughly enjoyed my lunch, thank you, DragonFlyLady :)
