An impressive dessert for company in early spring when the maple sap begins to flow.

Ingredients
  • 1 ½ c maple syrup
  • 4 egg whites
  • ½ c superfine or powdered sugar
  • 2 tsp baking powder
  • 4 tbsp cognac or pure apple juice
  • 1 tbsp butter (no substitutes)

Directions
  1. Preheat oven to 300F
  2. Boil 1 cup of the syrup until it makes ¾ cup, let cool slightly.
  3. Beat egg whites until stiff.
  4. Add the sugar and baking powder, carefully blend in the reduced syrup.
  5. Divide the remaining ½ cup syrup amongst 6 ramekins, divide and add cognac and butter to each.
  6. Slowly pour in the egg mixture.
  7. Place ramekins in a pan containing a water bath.
  8. Bake 50 minutes, serve hot.

I wonder if this could be made with splenda as im a diabetic and splenda measures cup for cup with sugar.sounds wonderful like it is though. JO
