Marie's Mac & Cheese

- 8 oz cooked elbow macaroni shopping list
- 1/2 stick unsalted butter shopping list
- 1/4 cup flour shopping list
- 2 cups milk (I use 2%, you can use whole milk) shopping list
- 8 oz grated sharp cheddar ( I use Tillamook) Save a little extra for topping shopping list
- 4 tbsp grated Parmesan, for topping shopping list
- 1/2 teas ground mustard shopping list
- Salt & freshly ground pepper to taste shopping list
How to make it
- Preheat oven to 350.
- In large saucepan, melt butter, add flour, whisking to make a paste. Add salt, pepper & ground mustard, cook for 1 minute while whisking..add milk. Bring to a simmer over medium heat until thickened, about 3 minutes.
- Add cheese, whisk until melted, add macaroni. Scrape into a 2 qt baking dish. Top with Parmesan & grated cheddar. Bake 25 minutes, then turn oven to broil for 2-3 minutes (keep an eye on this!) until browned & bubbly.
- Cool for about 10 minutes...enjoy!
- ***NOTE: Feel free to use your favorite cheese in this, I love to add Gruyere if I have it:)
