How to make it

  • Dressing:
  • combine oil, lemon juice, garlic, spices in small jar with a tight lid.
  • Shake and set aside.
  • Salad:
  • Scrub and cut potatoes in halves (bite-size pieces) depending on size.
  • In a 6 cup microwaveable casserole, combine potatoes, garlic and 1/4 cup of water. Cover and micowave at HIGH 8-10 minutes.
  • Stir or shake dish once while cooking.
  • Drain, discard garlic and transfer to a large bowl.
  • Pour dressing over hot potatoes.
  • Sprinkle on rosemary.
  • cover and let stand.
  • Place green beans in small microwaveable dish with 1/4 cup of water. Cover and microwave about 4-6 minutes.
  • Drain and rinse under cold water. Drain well.
  • Add to potatoes along with olives and crumble the feta cheese over all. Toss. Taste and adjust seasoning with salt and pepper.
