Carolina Pulled Chicken Sandwiches With Summertime Pickles

- 3/4 cup ketchup shopping list
- 3/4 cup cider vinegar (I used 3/4 but would reduce to 1/2 next time) shopping list
- 1/2 cup coarsely chopped sweet onion, such as Vidalia shopping list
- 1/3 cup firmly packed light brown sugar shopping list
- 1 package McCormick Grill Mates Carolina Country marinade shopping list
- 3 boneless skinless chicken breast halves shopping list
- 6 hamburg rolls shopping list
- Easy Summertime pickles shopping list
- 2 cups thinly sliced cucumbers shopping list
- 1/2 cup thinly sliced sweet onion shopping list
- 1 cup cider vinegar shopping list
- 1/2 cup sugar shopping list
- 1 tsp. celery seed shopping list
- 1 tsp. mustard seed shopping list
- 1 tsp. non-iodized salt shopping list
How to make it
- Place ketchup, vinegar, onion, sugar and Marinade Mix into crock pot and combine
- Add chicken
- Set crock pot to low and cook 4-6 hours
- Shred chicken using 2 forks
- Add back to crock pot to coat well with sauce
- Pickles
- Add onion and cucumber to container with a lid
- In saucepan, mix vinegar, sugar, celery seed, mustard seed and salt to combine
- Bring to boil
- Reduce heat to low and simmer 5 minutes
- Pour hot liquid over cucumbers and onions
- Cool slightly then refrigerate for at least 2 hours

Made this yesterday and it was delicious! The sauce was amazing, tangy, and the crunch of the pickles really made this sandwich...this is now my favorite "go to" pulled chicken sandwich!
