How to make it

  • In a large pot , heat the olive oil over medium heat, add onions, saute until translucent. Add garlic, saute for about a minute.
  • Add the chard to the onions & garlic, season with salt & pepper. After the greens begin to wilt, check pot to make sure there is enough moisture to continue cooking..if not add a little water.
  • Add the tomatoes, lower to med-low heat, simmer covered 15 to 20 minutes.
  • Add the beans to the pot and drizzle a tablespoon or two of olive oil, check seasonings.
  • Serve with a squeeze of fresh lemon juice and crumbled Feta.

    This is fun, Marie... thank you so much for directing me to some fun recipes for meatless meals. I'm going to my 45 year high school re-union tonight, and I feel that I'm to be able to make some wise choices and still feel satisfied. ;-)
