Mixed Cabbage Salad

Salad
- 4 cups finely sliced purple cabbage shopping list
- 4 cups finely sliced cabbage shopping list
- 1 cup mixed herbs, I used parsley, mint, basel and coriander, chopped shopping list
- 1/2 cup chopped spring onions shopping list
- 1/2 cup golden raisins (I use the seedless kind) shopping list
- 1/2 cup salted roasted peanuts shopping list
Dressing
- 1 clove garlic, finely chopped shopping list
- 1 tbsp tabasco (optional) shopping list
- 3 tbsp rice vinegar shopping list
- 2 tbsp soy sauce shopping list
- 2 tbsp tahini shopping list
- 2 tbsp olive oil shopping list
- 1 tbsp sesame oil shopping list
- salt and pepper to taste (remember the soy sauce is quite salty) shopping list
How to make it
- Start by making the dressing.
- I find it easier to use a glass compote container with lid. Put all ingredients into the container - close with the lid - and shake vigorously. It's ready ;)
- Combine all the salad ingredients except the peanuts in a large serving bowl.
- Drizzle with the dressing (you probably won't need it all - if so close with the lid and store in the fridge up to a week).
- Sprinkle the peanuts all over the salad just before eating.

Great Cabbage salad.
Just on time for summer and it's so easy to put together.
