Spicy Peanut Noodle Salad

- 8 ounces fresh chinese noodles (or any other fresh pasta) shopping list
- For the Dressing: shopping list
- 1/2 cup all natural peanut butter shopping list
- 3 tablespoons soy sauce shopping list
- 3 tablespoons Sriracha, more or less to taste shopping list
- 1 tablespoon fresh lime juice shopping list
- 1 tablespoon rice wine vinegar shopping list
- 1 tablespoon toasted sesame seed oil shopping list
- 1 clove garlic, grated on a microplane grater shopping list
- 1 jalapeño peppers, seeds and ribs removed, finely minced shopping list
- sugar and honey, to taste shopping list
- 3 tablespoons hot water shopping list
- To Assemble: shopping list
- 2 large red, orange, or yellow bell peppers, sliced into thin strips shopping list
- 1 large cucumber, seeded and sliced into fine julienne shopping list
- 1 cup mung bean sprouts shopping list
- 1/2 cup loosely packed fresh basil, mint, or cilantro leaves shopping list
- 4 scallions, sliced shopping list
- 1 red thai bird chilis, finely minced (optonal) shopping list
- 1/2 cup roasted peanuts, roughly crushed shopping list
How to make it
- Cook noodles according to package directions. Drain and rinse with cold water to cool down noodles. Set aside while you make the dressing.
- In a large bowl, combine all dressing ingredients. Whisk until homogeneous. Add drained cooled noodles to bowl. Add bell peppers, cucumber, bean sprouts, herbs, scallions, and bird chilis (if using). Toss to combine. Allow to chill in fridge for at least an hour. Serve topped with roasted peanuts.

Another beautiful recipe. I've made a similar salad to this before, but this one has multi-layers of elements, which is going to make it multi-yummy. :)

I made this for dinner last night and it was FANTASTIC! Was a bit worried about the 'heat' level but it was awesome, as was the flavour, crunch and colour! Will totally use this as my "Go To Asian Noodle Salad" from now on. Top shelf!
