Luisa's Spicy Peanut Noodle Salad

    I made Luisa's
    Spicy Peanut Noodle Salad
    for dinner last night along with Grilled Chicken (Sparow64's Picture Perfect Grilled Chicken again, just so you know! :))
    The recipe appealed to me as soon as I first saw it, as you can tell by the ingredient list that it is going to be jam-packed with flavour and texture. I have to admit to feeling intimidated by the amount of heat in the recipe. Initially, 3 tbsp. of Sriracha, which is an amount I have never put in any recipe ever. And then.....an entire (and mine was large) jalopeno pepper. She also says that you can add 1 red thai bird chili, finely minced, but a) I didn't have any on hand and b) I had chickened out on any more heat units by this point! :)
    The dressing for the salad is awesome. Love that fresh lime juice addition and I'm a huge fan of sesame seed oil so the more of that the better in my opinion. I added a large tablespoon of honey.
    The two colours of peppers really adds to the visual appeal of the salad and the julienned cucumbers really add to the fresh taste! I went with fresh basil and mint from my garden as opposed to the cilantro. I like cilantro but I thought the basil and mint might pack a bit more of a punch.
    The only thing I had trouble with is the amount of dressing in comparison to the salad and I think I know what I did wrong. I ended up with A LOT of dressing left over. My salad was swimming in it at the end, but no problem as when I was about to serve it, I just transferred it into another bowl and left the extra sauce behind. Luisa's recipe calls for 8 oz. of fresh Chinese noodles (or any other fresh pasta). I used an 8 oz. pkg. of Stir Fry noodles that you just have to saute and then steam for a few minutes before adding them to whatever recipe you choose. They didn't 'grow' per se. And I think if I'd taken 8 oz. of a noodle that would say double or triple its volume once cooked, I'd have been fine for the sauce/salad ratio. So next time, I shall find a different noodle to use. And there will be a next time.
    This is a fantastic summer time flavourful, different salad to put on the table. We loved the heat level as well as crunch and colour.

    You are exactly right about the noodles and why you had extra sauce. I would just suggest to anyone else that makes this to just add enough dressing to lightly coat the noodles (some drainage at the bottom of the salad will still happen because of the moisture of the veggies, especially cucumbers). As with most recipes I always adjust the heat, salt and sweetness level to my preference so I encourage others to do the same.

    I hope you try more of my recipes and let me know how they went for you :-)
