Pickled Mushrooms

- 3 lbs white mushrooms, cleaned and sliced if needed shopping list
- 1 cup olive oil shopping list
- 1 cup red wine vinegar shopping list
- 3 cloves garlic mashed shopping list
- 2 tsp dry mustard powder shopping list
- 3 Tbs dried parsley flakes shopping list
- 3 Tbs brown sugar shopping list
- 1 onion sliced shopping list
- 1 Tbs coarse salt shopping list
- 1/4 black pepper or to taste shopping list
How to make it
- If mushrooms are large, cut them in half or into chunks
- In a large sauce pot bring everything to a boil except mushrooms
- Then add mushrooms
- Stir well
- Bring to a simmer
- Partially cover and simmer 10-12 minutes or until mushrooms size reduced and are becoming tender, stirring now and then
- Remove from heat
- Let mushrooms cool in the liquid
- Then place in container or a bowl and cover and chill
- Note: I like to bring these to room temp a bit prior to serving so as to soften the olive oil

These are GREAT-- I made a half recipe and added a pinch each of dried rosemary and thyme. So savory. High 5.
