How to make it

  • If mushrooms are large, cut them in half or into chunks
  • In a large sauce pot bring everything to a boil except mushrooms
  • Then add mushrooms
  • Stir well
  • Bring to a simmer
  • Partially cover and simmer 10-12 minutes or until mushrooms size reduced and are becoming tender, stirring now and then
  • Remove from heat
  • Let mushrooms cool in the liquid
  • Then place in container or a bowl and cover and chill
  • Note: I like to bring these to room temp a bit prior to serving so as to soften the olive oil
