Thai-style Cucumber Salad

- 1/3 cup distilled white vinegar shopping list
- 1/3 cup sugar shopping list
- 1/2 tsp red pepper flakes shopping list
- 1/2 tsp Thai or Vietnamese fish sauce shopping list
- 1/2 tsp salt shopping list
- 2 lbs cucumbers, seeded, and chopped into 1/2-inch chunks shopping list
- 1/4 cup red onion, finely chopped shopping list
- 2 Tbsp fresh cilantro, chopped shopping list
- 2 Tbsp fresh mint, chopped shopping list
- 1/4 cup roasted peanuts shopping list
How to make it
- In large bowl, mix vinegar, sugar, pepper flakes, fish sauce and salt. If you are particularly sensitive to salt, you can omit as the fish sauce and peanuts will give it enough salt taste. Stir until sugar is dissolved.
- Add cucumber, onion, cilantro and mint; toss until well covered. Refrigerate, covered, for 1 hour.
- Before serving, add peanuts and toss again.
