  • Directions
  • You choose quantities -- rinse and scrub potatoes.
  • Slice potatoes in half, long end.
  • Place a slice of onion in the middle of potato.
  • Holding the 2 potato pieces, and onion, in place, wrap a piece of bacon around the long end, crisscross, then the short end. Secure with a toothpick.
  • Grill in disposable aluminum pan, on indirect, for 1 hour, turning to ensure bacon crisps evenly. Remove toothpicks before serving.
  • I usually serve with sour cream. Enjoy!

    I really liked this. I had a Yukon Gold so it was bigger than a red so I couldn't wrap the bacon as directed. My onion still had a bit of a crunch to it also, which I really liked. I wasn't grilling so I put his in a glass pie plate and baked it at 350F for an hour. Simple but good! I added a picture and a thread in IMI 10/9/13
