How to make it

  • Peel and core the apples. Cut them in small cubes (bite size pieces).
  • Place all ingredients in a very large pan except for the sugar.
  • Cook over medium heat so the apples get softer stiring occasionaly.
  • Ten minutes later add the sugar and let the compote simmer for about 20 minutes or until it gets the desired consistency.
  • Test the compote on a plate - this is the way I do it. Let it cool a bit. If the liquid cools to a gelly like consistency then the compote is ready.
  • Jar the compote and put the lids on immediatly.
  • For better conservation put the jars in a large pan with about 1 inch of water. Bring to a boil for about 10 minutes.
  • This compote should keep for two years.
