Pork And Lemon Cutlets

- 500 g. lean minced pork shopping list
- 50 g. fresh white breadcrumbs (I cheated and used store-bought - shopping list
- 35 g. freshly-grated Parmesan shopping list
- finely-grated zest of 1 lemon shopping list
- 1 tbsp. lemon juice shopping list
- 2 eggs shopping list
- 1 small handful finely-chopped parsley shopping list
- a little extra lemon juice shopping list
- 4 tbsps. oil shopping list
How to make it
- Put all the ingredients, down to and including the parsley, into a large bowl. Mix well. Add a little extra lemon juice and mix again. Roll the mixture into small balls about 5 cm. in diameter. I used a small ice-cream scoop and got 16 balls. Flatten them out a bit, into patties or 'cutlets', and put in the fridge for at least 5 minutes to rest ( I left mine for about 2 hours)
- In a frying pan, heat the oil and fry the patties in two batches until golden brown on both sides,10-12 minutes. Serve with plain boiled rice and gravy (spiked with more lemon juice), with some green vegetables, or put on tiny burger buns and serve with fries.
