How to make it

  • Put all the ingredients, down to and including the parsley, into a large bowl. Mix well. Add a little extra lemon juice and mix again. Roll the mixture into small balls about 5 cm. in diameter. I used a small ice-cream scoop and got 16 balls. Flatten them out a bit, into patties or 'cutlets', and put in the fridge for at least 5 minutes to rest ( I left mine for about 2 hours)
  • In a frying pan, heat the oil and fry the patties in two batches until golden brown on both sides,10-12 minutes. Serve with plain boiled rice and gravy (spiked with more lemon juice), with some green vegetables, or put on tiny burger buns and serve with fries.
