How to make it

  • Put all the ingredients, down to and including the parsley, into a large bowl. Mix well. Add a little extra lemon juice and mix again. Roll the mixture into small balls about 5 cm. in diameter. I used a small ice-cream scoop and got 16 balls. Flatten them out a bit, into patties or 'cutlets', and put in the fridge for at least 5 minutes to rest ( I left mine for about 2 hours)
  • In a frying pan, heat the oil and fry the patties in two batches until golden brown on both sides,10-12 minutes. Serve with plain boiled rice and gravy (spiked with more lemon juice), with some green vegetables, or put on tiny burger buns and serve with fries.

Made this last night for dinner and really enjoyed it. Quick, easy and nice and light for a great summer meal served with a tossed salad. Liked the mix of the parmesan and lemon flavourings. Thanks so much! More in IMI
