Trying to use up zucchini from the garden, a friend suggested this which is from The Bossy Italian Wife Blog. Great way to use some of those zukes that keep coming

- 1 zucchini, ends removed
- Pizza sauce (I made this Pizza Sauce) cut in half and simmered for 10 min
- Mozzarella cheese
- Pepperoni

Ingredients

1 zucchini, ends removed shopping list
pizza sauce (I made this pizza sauce) cut in half and simmered for 10 min shopping list
mozzarella cheese shopping list
pepperoni shopping list

How to make it

Preheat oven 450 (I used toaster oven)
Cut zucchini in half lengthwise ( I removed some of the inners to allow for more sauce and topping)
top with sauce, cheese and pepperoni See Photo
Place on foil covered baking dish.
Cook for 15-20 minutes depending on size of zucchini

This was a fun new way to eat stuffed zucchini, and I loved it! Oh cooked mine about 20-25 minutes. Delicious! More in Frankie's IMI link :)

This was my lunch. I really liked this a lot. Its a tasty way to get some vegetables. I cooked mine for 20 minutes because I like my mozzarella kinda crispy. I used my toaster oven, too, and just put the zucchini on a doubled piece of foil. I added a picture and a thread in IMI 7/28/13
