Ingredients

How to make it

  • Preheat oven to 350F. Grease a 2-quart casserole baking dish (or 9x9 deep dish pan)
  • In skillet over medium heat, heat 1 Tbsp olive oil; saute onion and garlic until tender and translucent - about 10 minutes. Stir in sun-dried tomatoes and saute another 5 minutes until softened. Remove from heat and let cool slightly.
  • Place bread cubes in prepared baking dish.
  • In separate bowl, whisk together eggs, half & half, pesto, Italian seasoning, salt and pepper, red pepper flakes and parsley. Stir in onion mixture, 1 1/2 cups mozzarella and 1/4 cup romano cheeses, and pepperoni. Pour over bread cubes - stir to combine. (Add more half & half or milk, if necessary - bread should be moistened)
  • Top with additional mozzarella and parmesan, and drizzle with 1 Tbsp olive oil.
  • (You can let this sit or refrigerate for a few hours, if desired)
  • Bake for about 20-25 minutes, or until bubbly and golden brown. Let sit at least 10 minutes before serving, or serve at room temperature.

    Made this for the gang the other night! Let me start by saying this was a lil bit of a stretch for us, as most of us don't like the texture of bread pudding. But, I've also made a savory version and we didn't love it, but knew it was successful enough that people who don't mind the texture would like it. Same, here. :) We LIKED it, the flavor was fantastic and it turned out just as it should, so directions and amounts where all good. I did use roasted red pepper in place of the sun dried tomato but I added a touch of tomato paste to the milk/egg mixture. I used fresh herbs and extra pepperoni. ;) I also prepared this the night before and baked it for dinner the next. That worked very well! So, that might be something others might wanna do, especially if they make this for a brunch, for which it would be a great addition! You could add mushrooms or other veggies to this, too, and it would be wonderful. I don't think we'll make it, again, but that's ONLY because we aren't fond of the texture of the egg/cream/bread in dishes like this and is NO reflection on the recipe.
