Baked Asparagus And Trout Stuffed With Dill Butter And Limes

- 2 whole Rainbow trout or similar fish, cleaned but whole shopping list
- 1lb fresh asparagus spears, trimmed shopping list
- 2 sticks butter, softened shopping list
- 1/4 cup fresh dill, minced shopping list
- 2 cloves garlic, minced shopping list
- 1 onion, chopped shopping list
- 4 limes, 2 sliced shopping list
- 1/2-2t red pepper flakes shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Combine butter, dill, juice from 1 lime, red pepper flakes, onion, garlic a lil salt and pepper.
- Arrange fish and asparagus in a large baking dish.
- Using about 3/4 of the butter mixture, spread half of that into the cavities of both fish.
- Arrange slices of lime into each fish over the butter mixture.
- With remaining mixture, drop by spoons full over the asparagus. See Photo
- Sprinkle both fish and asparagus with a lil more salt and pepper and drizzle with the remaining lime juice.
- Bake in a 400 oven for 15-18 minutes until fish is done and asparagus is tender.

This is delicious!! I couldn't find trout today, so I used sea bass. It turned out beautiful, flavorful and a fun first experience cooking with a whole fish :) More in the Janet's IMI post -------------> more
