Baked Asparagus and Trout

    I made Keni's
    Baked Asparagus And Trout Stuffed With Dill Butter And Limes
    for dinner last night. A lovely spring meal despite the fact we still have a ton of snow on the ground.
    There being just the two of us and knowing Keni's large meal portions, I eyeballed the butter mixture and cut it down for our small Rainbow trout. I subbed a lemon for the limes as I prefer lemon with fish, and I skipped the Hot pepper flakes.
    It was an easy recipe and a delicious one. The fresh dill , garlic and chopped onion added great flavour to both the fish and the asparagus. I cooked my trout for about 22 min. and both the fish and the asparagus were cooked to perfection. (My oven temperature is always wonky)
    I'll totally keep this recipe and make it again in the future. Love the fact it was baked so I could just walk away and let it do its thing.

    Thanks Michelle! Rainbow trout aren't large and it's super easy to throw in the oven. You should totally give it a whirl.

    I think I will pick up one next time I go to the fish market. I'm going to tell them to chop off the head though, Michael said he would be grossed out by the eyeball lol! Do you have to pick out bones or anything?

    With your great access to fresh fish and seafood Michelle you truly should do it. I just read a book not too long ago that talks about the Chinese food experience. There...the eyeball would be the treasured bit to be given to someone as an honour. The term 'mouth feel' is a big part of the Chinese food experience. :) I'm like you and Michael, and that would gross me out. I could have cut the head off to begin with but I did think it looked quite handsome all laid out like that. :) I'm going to say I picked out maybe 9 small bones in my half of the trout. They are fairly easy to avoid.
    Thanks FA. My Dad used to take me fishing when I was a kid and a Rainbow trout caused great excitement in the boat. :)
    I too like red pepper flakes but in this recipe I wanted the dill, lemon, onion, etc. to shine and wasn't going for the 'heat factor'.

    Okay I tried this, and I even left the head on, woo hoo! I couldn't find trout at any of the sea food shops (guess they aren't in season?) so I went with sea bass and I think it worked great! I only picked up one fish, which was good for 2 people. I wanted to get a picture of the fish fillet off the fish, but mine didn't come off as pretty as Janet's. Flavors were all really nice and I'm so glad I made a whole fish finally! Next is to grill one :)

    Very cool Michelle! Good Job! I have to admit to being surprised that your Sea Bass doesn't appear to be all that much bigger than my trout. I'm not at all familiar with sea bass but I just imagined them to be BIG. :) Fun eh? Perhaps trout are easier to remove bones than sea bass? Is this something the kids will eat?

    I'm guessing there are different types of sea bass, because when I googled images some people were holding up ginormous one's and some had smaller one's like mine. No, the kids will not touch fish or any seafood for that matter, ugh. I baked them up a chicken breast, which works out for me because I can turn the leftover chicken into chicken salad for lunch tomorrow :)

    I don't think have ever seen whole sea bass here. Just trout and salmon. That really looks good. How were the bones in the sea bass?

    Oh man there were so many whole fish to choose from I just wasn't familiar with a bunch of them. I figured bass was the way to go. The bones weren't teeny tiny, about 2 inches long but very skinny. The fish was just super flaky and tender and wouldn't hold together to get the whole darn piece out lol. I think I just need practice :)
