Ingredients

Sauce:

¼ cup flour

2 cups milk

8 oz. sliced fresh mushrooms (micro-waved)

2 T. butter or margarine

2 T. white wine (dry sherry)

Salt & pepper to taste

Pastry Shells:

8 frozen pastry/patty shells (I prefer Pepperidge Farm)

Eggs:

8 eggs

½ cup sour cream (maybe up to 1 cup)

¼ cup frozen or fresh chopped chives

½ t. salt

¼ t. pepper

Directions

SAUCE: Cook mushrooms and drain; make white sauce in microwave (melt butter; add flour; whisk in milk and cook until thick and bubbly); combine with mushrooms and add wine.

PASTRY SHELLS: Prepare according to package directions.

EGGS: Combine all egg ingredients and scramble until shiny. Remove from skillet. Serve immediately.

Just before serving, fill pastry shells with eggs and top with sauce. Serves 8.

Hint! Sauce can be prepared ahead in microwave, covered with plastic wrap and reheated when needed. Pastry shells can also be made the night before don’t need to be warm. Thus all you would need to do is prepare the eggs fresh then assemble.
