A whole-wheat, low fat and vegan "pudding" that is actually more of a moist cake in consistency. Wonderful and not too sweet, great for snacking or after school!

Ingredients
  • 1/3 cup apple butter
  • ½ cup brown sugar
  • 1 egg replacer
  • ½ cup all-purpose flour
  • ½ cup whole-wheat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 2 cups peeled, shredded Golden Delicious apples
  • ¼ cup chopped almonds (optional)

Directions
  1. Preheat oven to 350F
  2. Beat apple butter and sugar together in a large bowl.
  3. Add egg replacer and blend.
  4. Mix flours, soda, powder, cinnamon, nutmeg and salt.
  5. Combine apple shreds with nuts, if using.
  6. Add dry mixture alternately with apples to apple butter mixture.
  7. Spread in prepared 8” pan and bake 40 minutes.
