How to make it

  • Mix together the Oil, Garlic, Cayenne. It's best to do it in with a Mortar and Pestle - but a bowl works, just make sure they're all crushed and mixed together well.
  • Heat the oil in either a Wok or a flat bottomed frying pan.
  • Add tomatoes. Cook for a couple of minutes
  • Add everything else and cook for another 3 or 4 minutes, moving it all around to coat with the sauce that happens - as if by magic.
  • This makes a great lunch snack, with fresh Baguettes or your favourite bread (essential, to dip up the juices) or you can use it as a side dish with, for example, chicken fillets or pork steaks.
  • You can add onions and mushrooms ( put them in first) ......and forgive me for the spelling. I'm a Brit!
