Melting Mountain Chicken

- One 1/2 lb. Boneless halved chicken breast (I had two small fillets) shopping list
- *Note the only thing I measured or weighed was the chicken. shopping list
- The rest of the ingredients are fairly accurate though:) shopping list
- 1 quarter to one half diced yellow and red bell pepper. shopping list
- 3 or 4 Cremini or button mushrooms sliced or chopped shopping list
- A pinch ( 1⁄8 teaspoon)of garlic powder or more to taste shopping list
- A pinch (1⁄8 teaspoon) of dried oregano or more to taste shopping list
- 1 to 1 1/2 cups or more shredded mozzarella cheese shopping list
- salt and pepper to your taste shopping list
- Pam or other non stick spray shopping list
- toothpicks shopping list
How to make it
- Preheat oven to 350 F
- Pound chicken with a meat mallet between two pieces of plastic wrap until nicely flattened. Place aluminum foil on a cooking sheet one way and another piece of foil the other way. Spray the foil well with Pam or non stick cooking spray. Place the chicken on the foil. See Photo. Shake a bit of garlic powder with salt and pepper on the chicken. Then layer peppers and mushrooms then a bit of cheese on top of the chicken . Carefully wrap up the chicken and secure with toothpicks See Photo. Then mound on the rest of the cheese on top and bake in oven loosely covered in aluminium foil for 20 to 25 minutes until juices run clear. Top with a little more shredded mozzarella cheese, if desired. Broil for 3 to 5 minutes until the cheese turns light brown. Keep a good eye on it as you do not want it to burn. Using a metal spatula carefully remove from foil. Serve immediately. Enjoy!
