How to make it

  • (1) Put all the ingredients except the brie in a large saucepan.
  • (2) Cover, Bring to the boil & simmer gently for about 15 mins until the vegetables are tender.
  • (3) Stir in the cheese until melted.
  • (4) Cool a little, then puree in a liquidiser or use a hand blender.
  • (5) Taste for seasoning.
  • (6) Serve with a crusty roll & butter.

    I have a zucchini leek potato soup I love, so adding a brie to melt into it would be absolutely awesome. Wow, I can very nearly taste it. YUM.
