Guy Fieri's Chicken W/ Salsa Verde

- 1 roasting chicken 1.5 lbs. - 2 lbs. shopping list
- 1 tsp. dried rosemary shopping list
- 1 tsp. fresh ground pepper shopping list
- 1 tsp. paprika (I bet smoked paprika would be good in this) shopping list
- 1/2 tsp. salt shopping list
- 1 tsp. garlic powder shopping list
- 1/2 tsp. dried oregano shopping list
- 1/2 tsp. dried basil shopping list
- 2 tbsp. olive oil shopping list
- Special equipment : 2 bricks covered in aluminum foil shopping list
- Salsa Verde: shopping list
- 1/2 cup fresh basil leaves shopping list
- 1/2 cup fresh parsley leaves shopping list
- 1/2 tsp. red pepper flakes shopping list
- 1 tbsp. minced garlic shopping list
- 1 tsp. anchovy paste shopping list
- 1/2 tsp. capers shopping list
- 2 tbsp. chopped jarred roasted red bell pepper shopping list
- 1 tbsp. chopped onion shopping list
- 2 tbsp. lemon juice shopping list
- 1/3 cup olive oil shopping list
How to make it
- Remove the backbone of the chicken. Press down on the chicken on all joints to flatten it.
- In a small bowl, mix together the rosemary, pepper, paprika, salt, garlic, oregano,basil and olive oil. Rub the mixture under the skin of the chicken, the inside cavity and a bit on the outside skin.
- Preheat BBQ to 350F. Lay chicken on grill and top with your two foil covered bricks. Cook for half an hour and then turn the chicken over and replace the bricks on top. Cook for another hour or till juices run clear and remove chicken to a cutting board. Let rest five minutes before slicing. Serve with Salsa Verde.
- Salsa Verde:
- In a food processor, puree all ingredients except for the oil until smooth. With machine running, slowly add oil until well combined.
