How to make it

  • Bring a big pot of water to the boil. Season well with salt. Italians say the water where your boil the water should taste like sea water. Isn't that nice? :)
  • Boil the pasta according to the manufacturer's instructions.
  • While the pasta is boiling heat the marinara in a skillet, add the mascarpone and whisk until all is incorporated. Taste and season with salt and pepper if needed.
  • When the pasta is cooked drain it and pour it onto the sauce. Stir the pasta so it gets coated with the sauce.
  • Serve and grate parmesan cheese over it.

    I love the sounds of this Ana. I'm not a huge 'just tomato sauce' fan so this would elevate the dish plus, if one has used a bit of mascarpone in another recipe, this would be an excellent way to use up the rest of the container. Thanks!
