How to make it

  • In mixing bowl blend together.soda.spice.eggs.and pumpkin ..til smooth .
  • Add cake mix.blend til lumps dissolve
  • Note.use large spoon.no need for mixer
  • Spoon into 9 x 13 sprayed pan
  • Bake in pre.heated oven...325..for 20 minutes ...rotate cake...Bake another 25-30 minutes..remove and. cool
  • Note.if you like a sweeter cake.a light glaze may be added.

    Absolutely loved this cake. I thought that the pumpkin would over power the cake but it did not just got a nice flavour of the pumpkin and the pumpkin spice was correct for our taste. Now I know that my oven being a convection/self cleaning does run hotter than most and do adjust the temp but I found that the cake was done by 30 minutes so I would suggest that you check at 20 minutes which when you rotate. I did a simple butter/cream cheese frost (DH has been wanting icing on cakes these day.) Will be making again. Thank you Nanny1291955 for this wonderful recipe.
