Date Squares

- For the Filling shopping list
- 1 cup water shopping list
- 1/2 cup brown sugar shopping list
- 2 cups (about 10 ounces) pitted dates chopped shopping list
- Base and Topping shopping list
- 1 cup flour shopping list
- 1 and 1/2 cups rolled oats shopping list
- 3/4 cup white sugar shopping list
- 1/4 tsp.salt shopping list
- 3/4 cup butter shopping list
How to make it
- Filling
- Bring water and brown sugar to a boil and add the dates. Cook for 10 minutes stirring constantly
- Remove from heat and let cool.
- Base and Topping
- Combine flour, rolled oats, sugar and salt.
- Cut in butter until it looks like coarse bread crumbs
- Grease a 9 inch square pan, and spread half the base pressing lightly
- Pour filling in and spread over the base reaching all corners.
- Cover with remaining oat mixture and spread evenly.
- Bake in a 350 degree oven for 45-50 minutes.
- I have this in the oven now with a couple of changes.
- I used lactose and gluten free rolled oats and Earth Balance in place of the butter.

These are so sweet and yummy. Love the oatmeal crumb mixture. Very easy to make. I made as written, but sprinkled a few chopped walnuts on top. Thank you for sharing your recipe, Eastcoaster! See more in IMI II 12/31/17: more

Excellent!! I haven't had a great date square in years and these were wonderful. I followed the recipe subbing Earth Balance for the butter. I did make one minor change, I sprinkled raw sugar over the top, just like my Mom always did. Thanks for sha...more

Dec 12 2016 Wow are these squares fantastic and very addictive for eating. Reminds me of the date squares my DMIL use to make. I use "I Cannot Believe it's not butter. Will defiantly be making again.
