How to make it

  • Peel and rinse potatoes,
  • Cook in lightly salted water for 6-7 minutes, this depends on the size of the potatoes. They should be just fork tender.
  • Drain well in a colander and leave to steam for 3 minutes.
  • Give the colander a good shake to scruff the potatoes up.
  • Put the potatoes on a parchment lined cookie sheet, single layer.
  • Season with salt and pepper.
  • Add 1 tbs of oil, turn potatoes to coat and cook for 30 minutes, 375.
  • In a small bowl combine the garlic,oil, thyme and a splash of red wine vinegar. mix
  • With a potato masher, press down gently on each potato. This will produce more surface area for crisping.
  • Spoon oil mixture over potatoes and cook for 20-30 minutes, 400.
  • Potatoes should be golden brown when done.

    These are so good!! The potatoes I had were thin skinned so didn't peal. I needed to boil mine about 7 min longer for some reason, even though they were baby potatoes. Followed directions for other steps but did add some Italian seasoning along with garlic mixture. These were crisp and tender. Thanks Bren!

    These are little gems of crispy saltiness..... we loved the texture and flavour of these potatoes.... I used coarse sea salt and maybe a little extra red wine vinegar.... Mmmm... golden brown and delicious... thank you Bren.. yet another winner!!
