Smashed Potatoes

- 3 pounds small potatoes, twice the size of a squash ball shopping list
- 6-8 cloves garlic, micro planed or finely chopped shopping list
- sea salt shopping list
- pepper shopping list
- 3 tbs olive oil shopping list
- Splash red wine vinegar shopping list
- 1 tsp thyme shopping list
How to make it
- Peel and rinse potatoes,
- Cook in lightly salted water for 6-7 minutes, this depends on the size of the potatoes. They should be just fork tender.
- Drain well in a colander and leave to steam for 3 minutes.
- Give the colander a good shake to scruff the potatoes up.
- Put the potatoes on a parchment lined cookie sheet, single layer.
- Season with salt and pepper.
- Add 1 tbs of oil, turn potatoes to coat and cook for 30 minutes, 375.
- In a small bowl combine the garlic,oil, thyme and a splash of red wine vinegar. mix
- With a potato masher, press down gently on each potato. This will produce more surface area for crisping.
- Spoon oil mixture over potatoes and cook for 20-30 minutes, 400.
- Potatoes should be golden brown when done.
