Ingredients

How to make it

  • Heat oven to 375F
  • Sift the flour into a large bowl and make a well in the center
  • Add in sugar, salt, eggs,grated lemon peel and softened butter
  • Mix together with a wooden spoon until the ingredients are well blended
  • Knead the mixture thoroughly until smooth and pliable and shape into a ball
  • Cover and put into the fridge for 1 hour
  • On a floured board roll out the pastry a third at a time to about 1/4 inch thick
  • Cut with cookie cutters into what shape you like
  • Place the cookies 1/2 inch apart on a greased cookie sheet
  • Parchment paper works well also
  • Bake for 15 minutes or until light brown
  • When done cool and dust with icing sugar.
  • I put 4 doz. but it depends how big or small you shape them.I use Earth Balance Spread instead of butter(lactose intolerant) and it works very well.

    Made them for Christmas, 2016. I cut them into stars and topped with a lemon glaze. The kids devoured them, it was their favorite cookie on the tray!

    Yum! I love these cookies!! I first made your recipe a couple of years ago, and they are my favorite roll out cookie! They are crispy on the outside, tender and chewy inside and bake up perfectly so that you could decorate the tops if you wished. I like them with a little lemon glaze drizzled over top, but even plain dunked in tea is heaven! Thanks for posting it here :)
