This recipe sounds fantastic! I'm someone who does not eat a lot of meat, and this is right down my alley! (Southern slang...sorry...like rubbing the carrots?...lol) I'm trying this recipe this week.

Does Rub mean grate the carrot, being british I think of rubbing carrots as a way of peeling young ones but that doesn't make sense to me here.

    Sounds and looks great anyway.
