Slow Cooker Beef Stew With Egg Dumplings For Two

- 1 lb. beef stew meat, cut into 1 inch cubes shopping list
- 1/8 cup all purpose flour shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/2 tsp dried minced garlic shopping list
- 1 sm or 1/2 full size bay leaf shopping list
- 1/2 tsp paprika shopping list
- 1/2 tsp Worcestershire sauce shopping list
- 1/2 onion, chopped shopping list
- 1 1/4 cups beef broth shopping list
- 4 med red potatoes, unpeeled, cut into stew size chunks shopping list
- 8 baby carrots cut in half shopping list
- 1 stalk celery, sliced shopping list
- FOR DUMPLINGS shopping list
- 1 egg shopping list
- 1 TBSP milk shopping list
- 1/2 tsp salt shopping list
- 1/2 - 1 cup flour shopping list
How to make it
- Place meat in small slow cooker. In a small bowl, mix together flour, salt and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in remaining stew ingredients. Cover and cook on low setting 8-10 hours.
- For dumplings, bring a large pot of salted water to a boil. Beat egg and milk together. Beat in salt. Stir in flour till you get a very wet dough. If you tilt the bowl it should flow just a little bit. I'm guessing at the amount of flour because I always just mix it in till the dough is the right consistency for dumplings. Drop little bits of dough into the boiling water until you have used up all the dough. This is easiest if you use a stainless steel spoon and dip it into the hot water before you start, and keep dipping it every time you drop a dumpling to keep the dough from sticking to the spoon. Also, don't drop large bits. Dumplings grow a lot when they cook! Once all the dumplings are in the pot, let it simmer 5-8 minutes depending on how big they are. When done, drain the cooking water.
- Add the cooked dumplings to the slow cooker, stirring to get them coated with the gravy. Leave for 15 - 20 minutes to let the dumplings take on the beef stew flavor, then serve.
