How to make it

  • Juice the limes (This is probably the most time consuming part of the recipe)
  • Add all the ingredients, except for the oil, into the lime juice and mix well.
  • Into that drizzle some oil all while stirring with a fork or whisk in the same direction so that you form an emulsion. Stop when you get the viscosity and flavor-intensity you'd like.
  • All measurements are approximate, I rarely measure when I cook.

    Eh...when I made it it tasted great, but I've never been a stickler for rules and I've never heard that as a hard and fast one..the ratio of oil to liquid also has a lot to do with emulsification and thickening, though I suppose if you don't want as strong of a dressing adding more oil would help that...also the peanut butter provides a good deal of oil/fat

    it's generally accepted that almost all vinaigrettes have a 2:1 ratio... i'm not sure how it would work any other way. i really wouldn't reccommend deviating from that. otherwise it will taste unbalanced.
