Ingredients
  • Crust, mix and press into 9x13 pan bake for 20-25 minutes @ 350
  • ( when I make any of my cookie bars I usually do not bake the full amount of time given. They will bake with the topping yet. I bake this only 15 or 20 minutes. It makes them more delicate and crumbly as well)
  • 2 ¼ cups flour
  • 1 cup butter, soften and remember use sweet!
  • ½ cup 10X sugar
  • Beat:
  • 2 cups sugar
  • ½ cup lemon juice
  • 4 large eggs
  • Peel of one lemon
  • ¼ cup flour
  • Pour onto crust

Directions
  1. Bake 20 minutes
  2. Cool and sift 10X
  3. For a variation. You can also top the bars with 10X sugar mixed with lemon juice and coat the top of the bars with this instead of just 10x sugar.

10x sugar is granulated sugar that has been processed 10 times


PS 10x sugar information came came from Joy of Baking I would assume you could use icing sugar

Alterations


I was thinking of trying lime juice or orange juice instead of the lemon for a different taste. Also making a version of all 3 and putting them together on a plate for Thanksgiving or Christmas. What a pretty presentation!
