Chalupa Dip Recipe

Ingredients

2 cans Old El Paso refried beans, warmed to spread

2 teaspoons lemon juice

3 avocados

1/2 cup mayonnaise

1 packet taco seasoning

1/2 cup scallions, chopped

3 tomatoes, diced

shredded iceberg lettuce

8 ounces sour cream

Black olives, optional

12 ounces cheddar cheese, grated

Dippers

Directions

In a bowl, mix together avocados and lemon juice. Blend until smooth.

In a separate bowl, mix sour cream, mayonnaise and taco seasoning.

In a baking dish or serving dish with edges, spread the refried beans.

Spread the avocado mixture on top of the beans.

Spread the sour cream mixture on top of the avocado mixture.

Sprinkle the scallions on top of the sour cream mixture.

Sprinkle the tomatoes on top of the scallions.

Sprinkle the shredded lettuce on top of the tomatoes.

Sprinkle the cheese on top of the lettuce.

Refrigerate about 30 minutes before serving.

You can also garnish with some chopped black olives.

Serve with nacho chips.

I have not eaten today, and now that I have looked at all your posting in the last 24 hours, I think I may be full. This is going to have to be a must try too.
