How to make it

  • Preheat oven to 350°F. Spray 8 custard cups or large muffin tins with cooking spray and dust with flour.
  • Set aside
  • Combine flour, brown sugar, cocoa, and baking soda. Add bananas, yogurt, egg whites, vanilla, pecans, currents and coconut.
  • Stir.
  • Pour batter into prepared cups and top with oat & bran cereal and a small sprinkling of demara sugar. Bake until a tooth pick inserted into the middle comes out clean - about 30 - 35 minutes.
  • Cool.

    This sounds interesting. You must live where you are able to buy all the ingredients and for that I envy you. Since moving from NY to a tiny country town in PA - you can forget about finding anything around here! But will try to find these ingredients on the net.

    With the new year comes the resolution so I've been on the hunt for no fat/low fat sweets recipes so I can indulge without adding to the bulge, and these muffins sound like a plan.

    Those sound - and look - delish, noir. I think I have all the ingredients on hand, and we are having a COOL DOWN in the temps late next week...hurray...I can turn the oven on again! These will be baked soon...thanks!

    Forgive me for a spelling error...demara sugar...it is a coarse sugar used to sprinkle on baked goods to give it that sweet and crunch flavor. :)
