How to make it

  • Rinse and drain Blueberries, pat dry.
  • Sift together all dry ingredients into large bowl.
  • Add the Blueberries and gentle stir to distribute berries evenly throughout dry ingredients.
  • Beat eggs lightly in a medium bowl.
  • To eggs add milk, melted butter, lemon juice & lemon rind and whisk lightly until thoroughly blended.
  • Add egg mixture to dry ingredients and fold together with spatula until just blended. Do not over mix.
  • Spoon Batter, taking care not to deflate, into greased muffin tins.
  • Sprinkle sugar over tops.
  • Bake in preheated 425 Degree oven for 20 minutes or until golden brown.
  • Recipe makes Approx 12 2-inch or 48 1-inch muffins
