Lemon Blueberry Muffins

- 1 1/2 cups fresh or frozen blueberries shopping list
- 1/2 cup whole wheat flour shopping list
- 2 cups plain white flour shopping list
- 3/4 cup sugar shopping list
- 1 tablespoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon cinnamon shopping list
- 2 eggs shopping list
- 1/2 cup milk shopping list
- 1/4 cup butter (unsalted) melted and cooled shopping list
- 1/4 cup fresh lemon juice shopping list
- 1 teaspoon grated lemon rind shopping list
- 2 teaspoon sugar for muffin tops shopping list
How to make it
- Rinse and drain Blueberries, pat dry.
- Sift together all dry ingredients into large bowl.
- Add the Blueberries and gentle stir to distribute berries evenly throughout dry ingredients.
- Beat eggs lightly in a medium bowl.
- To eggs add milk, melted butter, lemon juice & lemon rind and whisk lightly until thoroughly blended.
- Add egg mixture to dry ingredients and fold together with spatula until just blended. Do not over mix.
- Spoon Batter, taking care not to deflate, into greased muffin tins.
- Sprinkle sugar over tops.
- Bake in preheated 425 Degree oven for 20 minutes or until golden brown.
- Recipe makes Approx 12 2-inch or 48 1-inch muffins
