Strawberry Carrot Cake With Strawberry Cream Cheese Glaze

This is an incredible cake and the glaze that goes over the top is awesome. Enjoy
Ingredients
- 2-1/2 cups all purpose flour shopping list
- 1-1/4 cups packed brown sugar shopping list
- 1 cup carrots finely shredded shopping list
- 1/2 cup vegetable oil shopping list
- 1/2 cup plain yogurt shopping list
- 1/3 cup water shopping list
- 1/2 cup pecans chopped shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon nutmeg shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 2 eggs shopping list
- 1 cup strawberries finely chopped shopping list
- Glaze: shopping list
- 2 ounces cream cheese softened shopping list
- 1 tablespoon mashed strawberries shopping list
- 1/2 teaspoon vanilla shopping list
- 3/4 cup powdered sugar shopping list
How to make it
- Preheat oven to 350.
- Grease and flour tube pan.
- Beat all ingredients except strawberries in a large bowl on low speed for 45 seconds.
- Beat on medium speed for 2 minutes scraping occasionally.
- Fold in strawberries then pour into prepared pan and bake 50 minutes.
- Cool 5 minute the remove from pan and cool completely on wire rack.
- Pour glaze over top.
- Beat cream cheese, mashed strawberries and vanilla in small bowl until blended. Gradually beat in powdered sugar until blended then spoon over cake.
