Caramel Bananas Recipe
This is a great little dessert just as it is. You could top it with whipped cream. We like it over vanilla bean ice cream or crepes. Or crepes with vanilla bean ice cream and this for a topping!

Ingredients
  • 1/2 cup granulated sugar
  • 1 cup light brown sugar, firmly packed
  • 3 tablespoons evaporated milk
  • 2 tablespoons butter
  • 2 ounces white rum
  • 4 bananas, sliced
  • 1 to 1 1/2 cups chopped peanuts

Directions
  1. Heat first four ingredients in a skillet until the sugars
  2. caramelize (melt and start to turn brown).
  3. Stir in 2 ounces
  4. white rum and let cool.
  5. Slice 4 bananas.
  6. Arrange 1/2 banana per person on dish, spooning
  7. 3 to 4 tablespoons of the caramel sauce over the bananas.
  8. Sprinkle 1 to 2 teaspoons of chopped peanuts over the caramel
  9. sauce.
  10. Yield: 8 portions (1/2 banana each)
  11. Optional: serve with crepes and vanilla bean ice cream.
