How to make it

  • In a large bowl, whisk together eggs and egg whites until well blended;
  • Whisk in milk and set aside.
  • In another bowl, combine flour, sugar and salt.
  • Gradually add flour mixture to egg mixture, stirring well. Set aside.
  • Coarsely grate apple, including peel.
  • Spray the cups of a 9-cup popover pan, or a muffin pan, with cooking spray.
  • Add the bacon, grated apple, and melted butter to batter, stirring until well blended.
  • Pour batter into prepared popover cups, 3/4 of the way full.
  • Bake at 450 degrees for 18 minutes; reduce heat to 325 degrees and bake for 10 more minutes.

    Yum, these sound wonderful. I wonder if I could make it in a pie tin and have one big puffy pancake? I love pork and apple. I'll have to try this for sure.
