Apple Bacon Popovers Or Muffins

- 2 large eggs shopping list
- 2 large egg whites shopping list
- 2 cups milk shopping list
- 2 cups all-purpose flour shopping list
- 2 tsp sugar shopping list
- 1/2 tsp salt shopping list
- 6 strips of bacon, cooked crisp and crumbled shopping list
- 1 large apple shopping list
- 1 Tbsp unsalted butter, melted shopping list
How to make it
- In a large bowl, whisk together eggs and egg whites until well blended;
- Whisk in milk and set aside.
- In another bowl, combine flour, sugar and salt.
- Gradually add flour mixture to egg mixture, stirring well. Set aside.
- Coarsely grate apple, including peel.
- Spray the cups of a 9-cup popover pan, or a muffin pan, with cooking spray.
- Add the bacon, grated apple, and melted butter to batter, stirring until well blended.
- Pour batter into prepared popover cups, 3/4 of the way full.
- Bake at 450 degrees for 18 minutes; reduce heat to 325 degrees and bake for 10 more minutes.
