Hands On Hawaiian Cake Recipe
A delicious and easy cake that is great for summer parties. Also great if you're hosting a luau!

Ingredients
  • 2 cups sugar
  • 2 cups flour
  • 2 eggs
  • 2 teaspoons baking soda
  • 1-20 ounce can crushed pineapple with juice
  • 1 cup flaked coconut
  • 1 cup chopped nuts, such as macadmia
  • 1/4 pound butter
  • 1-1/2 cups powdered sugar
  • 1-8 ounce package cream cheese
  • 1 teaspoon vanilla

Directions
  1. In a bowl, mix together, by hand (told ya' it was a handy cake); sugar, flour, eggs, baking soda, crushed pineapple and juice, coconut and nuts.
  2. Grease a 9x13-inch pan.
  3. Don't flour.
  4. Bake at 350° for 45 minutes.
  5. Topping:
  6. Mix together, with mixer at high speed, butter, powdered sugar, cream cheese and vanilla.
  7. Spread topping on cake when cake is cooled.
