This was delicious. Unfortunately I only had canned spinach and canned mushrooms but they worked great. I used Indian curry which we love. Ginger

Going to give this a try this week. I like simple curry.. and I was told by my Doctor who is from India, to toast the curry in a dry pan until you smell it... It works! This really sounds good... thanks!

This is my kind of food,..easy., and tasty!!!I have also read in an Indian cookbook that they cook the onion on very low heat for a long time, the onions become quite sweet when done this way.

This looks "delish" and thank you! I was told many years ago that if I want to enhance the flavour of curry, to gently saute it in the cooking oil first. Then add the veggies or meat whatever it is you are preparing. I have been using that technique for a long time now and it works. Brings out the flavour and aroma! Thanks again for your recipe!
