Ingredients

How to make it

  • In a greased 13x9x2-inch baking dish, place onion and chicken breasts.
  • Sprinkle with salt and pepper.
  • Layer mushrooms and zucchini over chicken.
  • In a bowl, combine garlic, tomatoes, basil and oregano.
  • Pour over vegetables.
  • Cover tightly.
  • Bake at 450° for 30 minutes, or until chicken juices run clear.
  • Sprinkle with parmesan cheese.

    I might try this tonught ... I was thinking of doing a healthy chicken and rice meal. Sounds like it would be great over rice.
