Mom made this a quick to put together supper dish after we had a big ham dinner and we had a surplus of ham. It is tasty and filling. I've been known to fix this using kielbasa chopped instead of the ham. Just as good. Have no clue why she called... More

Ingredients
  • 2 cups of diced leftover ham (2 cups of kielbasa cut in coins)
  • 2 medium onions, diced
  • small amount of bacon fat
  • 1 small head of green cabbage shredded
  • 1 teaspoon of caraway seeds
  • 5 oz of wide egg noodles
  • 1 pkg of grated cheddar cheese (optional for mom, necessary for kids)

Directions
  1. Preheat oven to 375 degrees.
  2. Saute ham and onions in bacon fat until onions are soft.
  3. Add cabbage, caraway, season with some salt and a few grinds of black pepper.
  4. Cover and let steam until the cabbage is limp but is still green.
  5. Cook noodles in slightly salted boiling water until just barely tender, drain very well.
  6. Add to cabbage and ham mixture.
  7. Put in dutch oven, bake uncovered for 35 to 40 minutes, stirring occasionally to allow mixture to evaporate.
  8. If you like, top with grated cheese and bake five minutes more.
  9. My child has to have the cheese to coax her into eating the cabbage. What can I say?

WE WOULD TAKE LEFT OVER KEILBASA A KRAUT AND ADD TO SAUTED ONION, MUSHROOMS AND THE NOODLES. I LOVE JUST THE CABBAGE AND NOODLES WITH ONIONS.I SEE THAT SELLING AT CARNIVALS AND FAIRS TOO. SO SIMPLE AND CHEAP BUT PEOPLE LOVE IT! NEVER ADDED CHEESE THOUGH, PROBABLY GOOD WITH THE HAM VERSION.
