With the ingrediants that are in this, you would think YUCK, but it is TRULY one of my families favorites. Try it once, you'll be hooked!

Ingredients
  • 1 packet your choice of favorite taco seasoning
  • 1 large jar of your favorite salsa
  • 2 tablespoons of peach preserves
  • 1 bag of wheat egg noodles (cooked)
  • OR
  • Whole grain rice (cook as much as you think you'll need)
  • 1-2 lbs cut up pork, beef, or venison
  • 2 tablespoons cooking oil, EVOO

Directions
  1. Cut up meat in stew like pieces
  2. Coat with taco seasoning
  3. Brown in oil, in wok, cast iron skillet, or non stick pan
  4. Once brown, add salsa, & peach preserves.
  5. Stir until well mixed.
  6. Turn heat to simmer, cover, and cook for 20-25 minutes.
  7. Serve over rice or noodles

Oooh - I have this recipe and my family LOVES it! Except... I like to go heavy on the peach jam, so I usually put 1/2 of a jar of jam in. =) It's great with a nice fresh salad on the side.
