German Vegetable Soup Recipe
This is a tradtional German soup one that easy to prepare and low cost. Goes great with a warm slice of bread and some butter!!!

Ingredients
  • 8 cups beef stock (homemade or canned)
  • 2 cups carrots sliced
  • 4 large potatoes cubed
  • 2 cups cut beans
  • 1 large onion finely diced
  • 2 cans diced tomato
  • 1 1/2 cups corn
  • 2 sprigs fresh thyme
  • 1/2 tsps allspice
  • 2 bay leaves
  • 2 tsp Worcestershire sauce
  • 1 tsp white vinegar
  • 2 tsps sugar

Directions
  1. Chop your onion, carrots and potato - in a large pot add 2 tsps of olive oil and add veggies. Cook for approximately 15 - 20 mins stirring often. Add broth and spices (thyme, allspice,bay leave and worcestershire), allow to cook until potatoes are fork tender.
  2. Add the tomatoes, beans and corn, add vinegar and sugar and let cook for another 30 - 50 minutes. Serve with a warm slice of fresh bread and some butter.
