How to make it

  • Chop your onion, carrots and potato - in a large pot add 2 tsps of olive oil and add veggies. Cook for approximately 15 - 20 mins stirring often. Add broth and spices (thyme, allspice,bay leave and worcestershire), allow to cook until potatoes are fork tender.
  • Add the tomatoes, beans and corn, add vinegar and sugar and let cook for another 30 - 50 minutes. Serve with a warm slice of fresh bread and some butter.

    Mundane. It is what it is. Vegetable soup. Suppose you could do worse.
