German Vegetable Soup

- 8 cups beef stock (homemade or canned) shopping list
- 2 cups carrots sliced shopping list
- 4 large potatoes cubed shopping list
- 2 cups cut beans shopping list
- 1 large onion finely diced shopping list
- 2 cans diced tomato shopping list
- 1 1/2 cups corn shopping list
- 2 sprigs fresh thyme shopping list
- 1/2 tsps allspice shopping list
- 2 bay leaves shopping list
- 2 tsp worcestershire sauce shopping list
- 1 tsp white vinegar shopping list
- 2 tsps sugar shopping list
How to make it
- Chop your onion, carrots and potato - in a large pot add 2 tsps of olive oil and add veggies. Cook for approximately 15 - 20 mins stirring often. Add broth and spices (thyme, allspice,bay leave and worcestershire), allow to cook until potatoes are fork tender.
- Add the tomatoes, beans and corn, add vinegar and sugar and let cook for another 30 - 50 minutes. Serve with a warm slice of fresh bread and some butter.
