So in the midst of making this I discovered the bananas I was going to use had gone REALLY bad - ack! What to do!??
I used half cup of sour cream; 4oz of cream cheese; half teaspoon of almond extract and about half cup of chopped almonds.
The result is a very light, melt in your mouth nut bread that I am very pleased with. If you decide to try it, I really hope you like it! :)

I had a few old bananas to use and tried your recipe. It was really good! I made muffins and shared them with some friends. Perfect with a cup of coffee. Thanks! C. J.

This was very yummy... i didn't have any walnuts (and my hubby isn't keen on them anyway), so i added choc chunks instead. even both my very fussy kids asked for more!

Made this bread this morning after baking a cake. This was EASY, and turned out WONDERFULLY! Good crumb. I added more of the walnuts, because DH loves them so---as well as 1/2 teaspoon vanilla. I give this recipe a "5" due to the ease of prep and great texture!
TRY THIS ONE YOU WON'T BE DISSAPPOINTED!

LOVE THIS RECIPE! I make muffins from it. I have zero skills and my foodie hubby loved it. I've made it three times now, last time I used brown sugar, whole wheat flour, and added the nuts. YUM!!! I definately recommend using the three bananas rather than two

I loved this recipe, but didn't have nuts, so added a handful of chopped dates, and butterschotch chips! Wow, it turned out great. It pays to use what you have around the house!
