Ingredients

How to make it

  • In a bowl, add zucchini, eggs, salt, pepper, parsley and cheese.
  • Mix to blend.
  • Add just as much flour as is needed for the fritters to hold shape when dropped in hot oil. (Too much flour is just too much flour!)
  • Heat about 1/2-inch of oil in a skillet.
  • Drop by spoonsful into hot oil and brown evenly.
  • Drain on a paper towel.
  • Can serve sour cream seasoned with paprika for dipping.
  • These can also be made early and re-heated in the oven or even frozen and thawed and re-heated.

    Read this yesterday and got a craving this afternoon for something fried. I halved the recipe and fixed it for a mid-afternoon meal. Wow! It was delicious! I tried the sour cream and paprika mixture and it didn't have the flavor I was looking for. So I mixed up half mayo half mustard with a sprinkling of garlic salt. Bam! That was it! Half the recipe makes four good sized fritters. Thanks. I won't be eating for awhile, but I'm definately satisfied...
