Zucchini Fritters

- 2 cups grated zucchini shopping list
- chopped parsley, to your liking shopping list
- salt and pepper, to taste shopping list
- 2 eggs, beaten shopping list
- 3/4-1 cup all-purpose flour shopping list
- 1/2 cup grated parmesan cheese shopping list
- oil for frying shopping list
- sour cream seasoned with paprika for dipping, if desired shopping list
How to make it
- In a bowl, add zucchini, eggs, salt, pepper, parsley and cheese.
- Mix to blend.
- Add just as much flour as is needed for the fritters to hold shape when dropped in hot oil. (Too much flour is just too much flour!)
- Heat about 1/2-inch of oil in a skillet.
- Drop by spoonsful into hot oil and brown evenly.
- Drain on a paper towel.
- Can serve sour cream seasoned with paprika for dipping.
- These can also be made early and re-heated in the oven or even frozen and thawed and re-heated.

I made this recipe tonight and the fritters were great...just wanted a different zucchini dish for a change....you've got my 5!

Read this yesterday and got a craving this afternoon for something fried. I halved the recipe and fixed it for a mid-afternoon meal. Wow! It was delicious! I tried the sour cream and paprika mixture and it didn't have the flavor I was looking for...more
