A delicious glaze / dressing covers this mild fish over a bed of sauteed vegetables. Excellent as a light lunch, or pair with jasmine rice for a great dinnertime meal.

Ingredients
  • 4 cups snow peas
  • 1 small sweet red pepper, thinly sliced
  • 1 ½ pounds halibut, cut in four 6oz pieces
  • 1 tsp soy sauce
  • ½ tsp grated ginger root
  • ½ tbsp crushed garlic
  • 1 tsp sugar
  • ½ cup pineapple juice
  • ½ tbsp sesame seeds
  • ¼ cup scallions, minced

Directions
  1. Coat a large, non-stick skillet with cooking spray and place over medium heat.
  2. Add snow peas and pepper; sauté until peas just start to turn brown, about 5 minutes.
  3. Push vegetables to the side.
  4. Add halibut in one layer; cook through without disturbing the fish, about 4 minutes.
  5. Flip fish and cook a further 4 minutes.
  6. Meanwhile, in a small bowl stir together soy sauce, ginger, garlic, sugar, pineapple juice and sesame seeds.
  7. To serve, spoon ¼ of peas and peppers onto each of 4 dinner plates; top each with a halibut steak; sprinkle each with scallions and drizzle with sauce.
