Tangy Asian Halibut and Peas

- 4 cups snow peas shopping list
- 1 small sweet red pepper, thinly sliced shopping list
- 1 ½ pounds halibut, cut in four 6oz pieces shopping list
- 1 tsp soy sauce shopping list
- ½ tsp grated ginger root shopping list
- ½ tbsp crushed garlic shopping list
- 1 tsp sugar shopping list
- ½ cup pineapple juice shopping list
- ½ tbsp sesame seeds shopping list
- ¼ cup scallions, minced shopping list
How to make it
- Coat a large, non-stick skillet with cooking spray and place over medium heat.
- Add snow peas and pepper; sauté until peas just start to turn brown, about 5 minutes.
- Push vegetables to the side.
- Add halibut in one layer; cook through without disturbing the fish, about 4 minutes.
- Flip fish and cook a further 4 minutes.
- Meanwhile, in a small bowl stir together soy sauce, ginger, garlic, sugar, pineapple juice and sesame seeds.
- To serve, spoon ¼ of peas and peppers onto each of 4 dinner plates; top each with a halibut steak; sprinkle each with scallions and drizzle with sauce.
